Mori Farm’s Fine Dining ‘Re-Treat’ experience left us speechless for all the right reasons; curious about the young Bruneian chef collaborating with the Bruneian Permaculture farm, myself and my dinner partner were pleasantly surprised at not only how thoughtful the five-course menu by Chef Jerry Tew was, but at the impeccable service from the Mori Farm staff. A private car shuttle to a modern Balinese-inspired space, and attentive service? We certainly weren’t expecting a true fine dining experience in the heart of Tutong’s farmland.
After a delicious dinner that included luxurious dishes like herb butter pan-seared scallops in a lemongrass crème, a Moringa cracker with house acar, asam aur-aur preserve and grated bunga kantan, and house Focaccia with herb butter that I asked for far too many servings of, well … I can safely say my expectations were surpassed! Chef Tew’s training with prestigious establishments Les Parisiens in Paris, and Naked Finn in Singapore, was showcased in the farm-to-table concept that utilised Bruneian produce and provoked the diner to reconsider the everyday in a new way.
